RICE GREEN TEA PUDDING

 


"Wonderfully comforting on a cold day, and may even be appealing if you don't have much appetite."

Place in saucepan with heavy thick bottom:   3 1/2 cups lowfat milk
                                                                  1 can lowfat evaporated milk
Heat till steaming.  Steep in milk 5 min:         5 green teabags

Stir in:        1 cup arborio rice
                  2/3 cup brown sugar
                  1/4 tsp. salt
   
Bring to boil.  Stir, and reduce heat to low.  Simmer for 45 minutes, uncovered, stirring every 5 minutes, till rice is tender.

Stir in:        1 Tablespoon finely chopped crystallized ginger
                  1 teaspoon cinnamon
                  1/2 teaspoon allspice
                  1/2 cup raisins
