SPINACH AND GREEN TEA RISOTTO

 "A delicious rice dish, with the nutritional benefits of both green vegetables and green tea".
Preheat oven to 375 degrees.

Saute:  (in oven-proof Corning-ware type casserole or pot with oven-proof handles)
            1 onion, chopped
            2 Tablespoons olive oil

            Saute several minutes.

Add:     1 1/2 cups Arborio rice.  Again, saute 2 minutes.
Add:     1 cup white wine. Saute 2 minutes.
            1  14 1/2 oz can chicken or vegetable broth.
            1 cup brewed green tea.
            Bring to boil. Stir and reduce to simmer for 10 minutes.

Stir in:  2 generous cups (packed) washed baby spinach
            1 teaspoon crushed garlic or pesto
            1 teaspoon Matcha (Japanese green tea powder)
            2 Tablespoons Parmesan cheese
            1 tsp salt
            Fresh ground pepper
            Simmer and stir for 2 minutes.


Top with:  3 Teaspoons Parmesan cheese
 Bake:  40 minutes.  Makes 8 servings.
